It's a bit battered and faded, but it's been my faithful companion to work these past few months as, with increased effort to get fit and stay healthy, I've started bringing in packed lunches.
Packed lunches are a faff. There is no way around it. Some people are organised and do it the night before. I prefer to do it in the morning, and don't mid getting up 20 mins earlier so I can make myself a nice brekkie and prepare the food for the day. If I can make extra food the night before so I have leftovers then I'll do that.
Today is a great example of the yummy treats I now get to snack on and enjoy throughout the day:
- Salad with homemade vinaigrette dressing
- Celery and carrot sticks with some supermarket hummus (leftovers from a bbq yesterday)
- A boiled egg (I usually make extra at breakfast)
- Handful of macadamia nuts
- A tin of Fish 4 Ever Mackeral fillets in brine (an experiment to get more oily fish in my diet... may be short lived if I'm not keen)
- A couple of squares of dark chocolate (currently tesco's 74% Cocoa Ecuadorian which is YUM)
- A couple of Pukka tea bags (detox and green tea)
There's quite a lot there, and I may not eat it all (often reuse bits the next day)... but it only took me only 10 mins to throw together this morning and, barring the slightly expensive ethically sourced fish, I'm saving a whole lot of money and eating much fresher, healthier and more delicious lunches.
